Birthday Treats!!!

Today is my birthday!! I turn a young 24 on this beautiful day. I’m not one to ever do anything fancy to celebrate.  All I need are friends and family and a whole lot of delicious food…that to me is the perfect birthday. So, in lieu of this celebration I thought I would make some delicious (and healthy) birthday treats. Instead of all the processed flour and sugar that we usually consume on birthdays, I have prepared two desserts that are refreshing, sweet and simple to make. Enjoy!

Banana Mango Sorbet

INGREDIENTS

1 whole banana (fresh or frozen)

1 whole orange, peeled

1 cup mango (fresh or frozen)

1-2 tbs chia seeds

1/2 cup spinach (Optional)

1 cup water (may need more if it isn’t blending)

1 cup ice

YIELDS: 4 servings

INSTRUCTIONS:

Place all ingredients into blender. Blend until everything has come together (I like to use frozen fruit for this recipe)

Enjoy!

No Bake Chocolate Oatmeal Cookies

This recipe comes from the blog Oh She Glows. I changed it slightly.

INGREDIENTS:

1/2 cup rolled oats

1/4 cup dark chocolate chips (can use non-dairy)– I like the brand Camino

1 large banana

1 tbsp chia seeds

1 tsp cacao/cocoa powder

1 tsp cinnamon (optional)

YIELDS: 8 cookies

 INSTRUCTIONS:

In a double boiler (or a make shift one) melt the chocolate chips.

Mash the banana  into the melted chocolate chips with a fork.

Stir in the remaining ingredients. Make sure the oats are well coated.

Line a tray with parchment paper and spoon out 8 cookies. Alternatively you can use muffin liners. Freeze for at least 1 hour. They will be firm but chewy. Store cookies in the freezer (if you haven’t already eaten them all!)

  1. Happy birthday to you Shelby. I want to thank you for all the delicious recipes to date.The roasted brussel sprouts were a big hit and I was required to make them several times!
    I also thank you for making my birthday a sweet one for the recipes you included today. I shall have a taste of them on my birthday which is tomorrow, July 19. So again, HAPPY BIRTHDAY to you Shelby and many many more—wonderful recipes.
