Oh how I used to love southern fried chicken. The crunchy texture, salty taste and the feeling of pure comfort as it went down. There was nothing better! But those days are over. No more food fried in mystery oil or ingredients made in a lab. I have the secret to the new age “southern fried chicken” that is quickly making its way into the spotlight. For starters, it is baked not fried, it is made with wholesome ingredients AND it is real chicken!!!! This Simple Dish is definitely one to try. Enjoy!
Quinoa Crusted Chicken
4 breasts of Organic Chicken
3 cupS cooked quinoa (which is 1 cup uncooked)
1 organic egg
1tsp sea salt (or more to taste)
1tsp pepper (or more to taste)
2 tbsp extra virgin olive oil
OPTIONAL:
1tsp garlic powder
1tsp onion powder
1-2 tsp of any other spice or herb that your little heart desires
**I added a little bit of David’s Special Steak Rub. But make it your own!**
(Recipe Yields 4 servings)
Instructions

Preheat oven to 375*F and line a baking sheet with parchment paper.

Rinse quinoa first. Boil 2 cups of water. Once boiled add 1 cup quinoa. Bring back to boil. Then set temperature to medium and cover for 12 minutes. Turn off and let stand for 5 minutes. Fluff with fork when finished (1 cup dry quinoa yields 3 cups cooked)

In a separate dish, combine quinoa with salt and pepper (and the other spices that you choose)

Scramble raw egg into another dish.

Dip chicken into egg, coat well. Then put chicken into quinoa mixture, coat well. Place chicken onto baking sheet.

Lightly brush oil over each piece of chicken to help it brown.

Bake for 30-45 minutes depending on thickness of chicken

**You can drizzle some fresh lemon juice over the chicken when it is finished to give it a nice tang…Then you can call it “Quinoa Crusted Lemon Chicken”…two recipes in one, delicious!
**This dish goes well with any kind of salad and steamed vegetable (broccoli, cauliflower, collard greens, asparagus, kale, sweet potato, etc). You can also make this into chicken fingers for the kids instead of buying pre-packaged brands. Or, try this recipe on fish such as sole and tilapia. **

I’m thinking that you’ll probably need less quinoa. However, you can make the allotted amount and put some aside to make a delicious salad! I’d love to know how it turns out
